Swiss Cervelas Taks Force
SAFOSO was asked to join a ‘task force’ that performed an independent scientific risk assessment, concluding that the risk to consumers was ‘extremely small’, and helped to identify alternative, even safer sources of casings.
The cervelas sausage comes close to being a national icon in Switzerland with an average annual consumption of about 20 sausages per person. Brazilian cow’s intestines were used as casings for the sausage until 2007, but imports were banned in response to fears over BSE.
